Busy day of cooking. Prepared lunchfood for the week, including an experiment, plus making cookies for Samhain on Tuesday.
Cookies were vegan gluten-free peanut butter cookies, which were relatively straightforward (even as I managed to prepare them in tandem with the second half of the day's experiment).
Experiment was sunflower seed cakes. Simmer 2 1/2 cups sunflower seeds for 1 hour, mash them, mix with 6 tbsp cornmeal and 3 tbsp maple syrup, form into cakes and fry. Came out mostly okay. Didn't bind the way one might have hoped. Makes me wonder if I should be using cornstarch instead. (Using a larger pan, where I could get a better angle on the spatula, would also make a difference I think.)
Also coulda had more flavor. I'm tempted to crank up the sweetness factor— because I always am— but that would be counterproductive in a daily ration. I feel like this would respond well to spices, but I'm unsure what spices pair well with sunflower seeds.
Anyway, based on the output, assuming I solve the frying problem, it looks like I'd need to triple the recipe to get a full week's worth of lunchfood out of this. Definitely need to pick up that pot and the large frying pan I'd been thinking of. Cookware is always spendy for me bc I prefer to buy the nice stuff, so I'd been putting it off, but it's time to get real tools.
The rest of the day's business was carving two pineapples, because that's the rest of what I'm eating these days :)
